Spanish Style Squid & Chorizo Stew

  • 2 x 200g fresh squids tubes, cleaned and cut into rings
  • 2tbsp vegetable oil100g chorizo, diced
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 4 cloves garlic, left whole
  • 1tbsp smoked paprika
  • 2 x 400g cans chopped tomato
  • 200ml reduced-salt chicken stock
  • 1 sweet potato, peeled and diced
  • Fresh parsley, to garnish

  1. Heat the oil in a large saucepan then add the chorizo and fry for 3-4 minutes until the chorizo releases its oil. Add the onion, red pepper and garlic cloves and fry for around 5 minutes, until they soften. Add the paprika and cook out for a further 4-5 minutes.
  2. Add the tomatoes, stock and sweet potato and bring to a gentle simmer for 15 minutes. Then add and squid and continue to simmer gently for 10-15 minutes until the squid is tender.
  3. Season to taste and serve the stew garnished with chopped parsley.
